Malted Barley

Arguably, the key ingredient in beer making, providing colour and flavour. Our master brewer selects the highest quality malted barley for beer making. The malting process involves the steeping of barley grains in water. This switches on the enzymes, which begin converting the sugar in the seed to smaller sugars, which can be used by the yeast. The barley is then gently heated in a kiln and is now malted and ready for brewing. Malting

Brewing starts at the malting company where the maltster encourages the barley to germinate. To do this the barley is steeped in water and then allowed to swell a little. This brings about germination. The barley begins to produce enzymes that are used in the brewing process to breakdown the starch in the malt into sugar that the yeast can convert to alcohol.....more
